Chocolate Sponge Roll

This was Marc's Grandmother's recipe


6 tbs cake flour

6 tbs cocoa

1/2 tsp baking powder

1/4 tsp salt

4 egg whites

1/4 cup sugar (white)

4 egg yolks

1 tsp vanilla extract

Confectioners Sugar

Whipping Cream


Sift together 3 times - flour, cocoa, baking powder and salt. Beat egg whites stiff but not dry; gradually fold in sugar. Beat egg yolks thick & lemon colored; add vanilla extract. Fold egg yolks into egg white mixture. Fold in flour mixture.

Line pan 9" x 14" x 1" (cookie sheet) with wax paper. Pour in batter. Bake in hot over (400* F) 12 mins.

Turn out on towel dusted with confectioners sugar. Remove paper, trim crisp edges. Roll up lengthwise; wrap in towel.

Cool slightly. Whip cream stiff. If desired, flavor and sweeten.

Unroll cake, spread with cream; roll up.

Sprinkle with confectioners sugar
